Recipe quinoa vegetable salad. In a large serving bowl whisk together the lemon juice and garlic. Combine the cooled quinoa and combine together with the vegetables and then pour the dressing and toss to combine. Stir in the remaining oil lemon juice and zest and season with sugar to taste.
In a small bowl combine the lemon juice vinegar parsley thyme oil mustard sugar salt and pepper. Drain any remaining water from the quinoa with a mesh sieve and transfer to a large mixing bowl. Pour in the water 2 teaspoons salt and 1 4 teaspoon black pepper and bring to the boil.
Drizzle over the quinoa and toss together with the roasted vegetables and parsley. This bright and colorful salad is a great summertime recipe or anytime you want to feel like it s summertime. Place spinach on a serving plate.
Light and citrusy it s a whole new way to enjoy quinoa. Simmer until the quinoa is tender about 20 minutes. Bring to a boil.
Line a baking sheet with parchment paper. Crumble over the feta toss gently again and serve. Transfer to a large bowl.
