2 lightly grease with butter 8 9 of the wells of a nonstick muffin pan.
Recipe of the day potato puffs. Mix in the mashed potatoes and egg until well blended. In a large saucepan bring the water butter and salt to a boil. Slowly stir into pan.
Add eggs 1 at a time beating well after each addition. Cover and cook for 15 20 minutes or until tender. 3 in a medium mixing bowl whisk the eggs then mix in the sour cream.
Remove from the heat. Heat oil in a deep fryer or heavy deep skillet to 365 degrees f 180 degrees c. Combine the flour and potato flakes.
Remove from the heat. Place frozen potato puffs on greased baking sheets. Gradually stir into mashed potatoes.
Carefully drop the potato mixture by spoonfuls into the hot oil and fry until golden brown about 5 minutes. Transfer to a paper towel lined rimmed baking sheet to drain. In a small bowl whisk the egg yolks milk salt basil and pepper.
In a small bowl beat egg whites on high speed until stiff. Garnish potato puffs with desired topping. Beat egg whites until stiff.
