Recipe Old Fashioned Apple Butter
Reduce heat to medium.
Recipe old fashioned apple butter. Combine apples apple cider brown sugar honey and 1 2 teaspoon salt in a dutch oven over medium heat. Add sugar and spices mixing well. Cook stirring frequently 1 hour or until mixture thickens.
Puree apple mixture in a blender. Reduce heat and simmer covered for 20 to 25 minutes. Place 2 pounds of washed cored and quartered apples in a microwave safe bowl and zap on high for 15 minutes or until the apples are completely soft.
Pour puree into a shallow baking dish and bake at 300 for 2 hours or until thick enough to hold its shape. Stir often while cooking. Then process them in a food mill to remove the peels.
Remove from the heat and add lemon juice cinnamon and vanilla. Cover at once with metal lids and screw bands tight. Bring apples and cider to a boil in heavy saucepan.
Combine the puree with 1 3 cup maple syrup or more to taste and 1 2 teaspoon cinnamon or more to taste. Quickly ladle apple butter into hot sterilized jars leaving 1 4 inch headspace.
