Recipe Rice Pudding With Eggs
In a medium saucepan combine the cooked rice with 1 1 2 cups of the milk and the sugar.
Recipe rice pudding with eggs. Cook and stir for 15 minutes over medium heat until the mixture starts to thicken. Add rice to egg mixture whisk. Beat together egg yolks 1 4 cup sugar and salt.
Cook and stir until thick and creamy 15 to 20 minutes. Pour into a 9x13 inch dish and cover with plastic wrap folding back the corners to allow the steam to escape. Stir into rice mixture and return pot to low heat stirring constantly for 2 minutes.
Pour milk over each serving if desired. Combine rice and milk on top of double boiler. Bake uncovered at 375 for 45 50 minutes or until a knife inserted in the center comes out clean.
Bake covered 45 minutes stirring every 15 minutes. Combine cooked rice 1 1 2 cups milk and salt in a saucepan over medium heat. Add the egg mixture to the saucepan with the remaining rice mixture.
In a small bowl whisk the eggs milk sugar and nutmeg. Slowly add about half a cup of the hot rice mixture to the egg mixture whisking quickly to temper the egg mixture. Place first four ingredients in a large saucepan.
Continue cooking until egg is set 2 to 3 minutes. Add yolk mixture to hot rice mixture and cook 3 4 minutes stirring constantly. Finish combining until thickened.
