Recipe spaghetti squash au gratin. Place spaghetti squash in a covered dish and add 1 4 inch of water. Spray a 9 by 13 inch baking dish with cooking spray. Fill a large pot with about 2 inches of water and bring it to a simmer.
Start by piercing the spaghetti squash all over with a fork. Microwave for 10 to 12 minutes. Then place the whole squash on a microwave safe plate and microwave for 10 14 minutes depending on size until the squash is tender.
Beat the eggs in a large bowl. Combine the squash onions sour cream and half the cheese together and mix well. Scrape insides of squash with a fork and transfer to a small bowl.
Cook stirring often for five minutes until the strands of squash are a little more tender. Remove the seeds and scrape out with a fork. Transfer the mixture to a buttered baking dish and top with remaining cheese.
Place into a 375ยบ for 15 20 minutes until golden brown on top. Over a medium sized bowl take the spaghetti squash and scrape out the insides with fork. Season the spaghetti squash with a little bit of olive oil salt and pepper.
Bake until top is golden brown and mixture is bubbling at edges 20 to 25 minutes. In a small bowl combine 1 teaspoon sage breadcrumbs and parmesan and sprinkle over squash. Add onions sour cream and 1 cup of cheese mix well.
