Recipe Sweet Potato Kale Quinoa
Roast the sweet potato for 30 to 35 minutes flipping halfway through.
Recipe sweet potato kale quinoa. Then add in the garlic sage and quinoa and sauté for 2 minutes more. Cook for 12 15 minutes or until water is absorbed. Stir and allow the acid to cook off for 1 minute.
Preheat oven to 425f line a baking sheet. Wash sweet potatoes and cut into 1 2 inch cubes. To assemble the salad bowl plate the kale and top with 1 4 of the sweet potatoes 1 4 of the quinoa 1 4 of the cranberries and 1 4 of the blue cheese optional.
Mix all the dressing ingredients together in a small bowl or jar. Roast for another 10 minutes until tender and lightly browned. While quinoa is cooking spread sweet potato wedges on baking sheet and roast at 375 degrees for 10 15 minutes.
Turn the heat up to medium high and add in the diced sweet potatoes and sauté for 2 minutes. Meanwhile combine quinoa and 2 cups of water in a medium saucepan. Mix in mixing bowl with 2 tablespoons olive oil.
Preheat oven to 425 degrees f. Rinse and peel sweet potatoes chopping them into 1 4 inch cubes. Toss the sweet potato with the olive oil then spread onto the baking sheet and bake for 20 25 minutes until cooked.
Spread the sweet potatoes into a single layer and roast for 15 minutes before stirring and flipping. Spread sweet potatoes out on prepared baking sheet in a single layer and roast in the oven for about 30 minutes flipping them once. On a large baking sheet lined with parchment paper toss together the sweet potatoes with one tablespoon of olive oil and salt to taste.
