Rice Pudding Recipe Risotto

Rice pudding recipe risotto. Stirring helps release the starches from the rice which thickens the cream. I have served warm rice pudding at my b b for years and it is so similar to this. I use 1 3 c arborio rice with 4 cups skim milk 1 4 tsp.
1 cup arborio rice. Sugar beaten with 1 egg. Put it all in the top of a dbl boiler and simmer for 1 1 2 hr.
Add the rice return to a boil and then reduce the heat to the lowest setting. Put all ingredient s into the pan except the sugar and cinnamon if using. Once the ingredients are in the pan on an extremely low heat cook for averagely 40 minutes stirring every 10 minutes to prevent burning.
Add the rice turn the heat down and stir until the rice is covered in the browned butter. Risotto rice pudding with brown sugar and vanilla. Bring water salt and butter to a boil in a medium saucepan.
Gently cook the rice for about 15 20 minutes stirring all the time until it softens and absorbs the creamy liquid. When about an inch of milk remains on the top i stir in 1 4 c. Continue stirring until well incorporated.
Reduce the heat to medium low and simmer stirring every 5 minutes as the mixture starts to thicken for about 30 minutes. Pour in the cream almond milk and dark muscovado sugar. 2 tablespoon unsalted butter.
