Roasted Sweet Potatoes Quinoa Recipe

Add the sweet potato mixture to the quinoa then add the cilantro and lime. Coat them with a little olive oil and place face down on a parchment lined baking sheet. Cook stirring occasionally until the sweet potatoes are tender and the liquid is almost absorbed about 15 minutes.
