Old Fashioned Quince Jelly Recipe
Place quince and 10 cups water in large pot and bring to a boil.

Bring to a boil over high heat then reduce heat to medium and simmer for about 50 minutes to 1 hour or until quinces are completely soft and water has drained completely. Return liquid to pot and stir in sugar and lemon juice. Combine fruit with 4aic.
Quince mixed with apples or pears also makes a great sauce. Rub the quinces with a tea towel to remove excess fluff and then using a cleaver or heavy knife chop them roughly and i mean roughly they can be rock hard into pieces. Bring to a boil.
Add the water and sugar to a large pan and bring it to a boil. When the sugar is dissolved add the quinces cut into cubes and leave to cook on a low to medium heat until the fruit is soft and has a deep orange colour and the liquid has the consistency of a thick syrup similar to runny honey. Add the bourbon and stir gently.
Cover reduce heat to medium low and simmer 1 hour. Cut quince to small pieces place them in a pot along with the cloves and cinnamon stick and cover with water. Remove from heat and cool overnight.
Strain liquid from quince and discard all solids. Water in a nonaluminum pan and heat to boiling then simmer for quarter hour. Place a mesh strainer over it and cover the strainer with a large piece of cheesecloth.
