Old Fashioned Sherry Trifle Recipe
Arrange cake in 3 litre 12 cup bowl.
Old fashioned sherry trifle recipe. Roughly crush the ratafia biscuits and sprinkle over the raspberries. Layer 2 repeat the process. Measure the sherry into a jug and make up to 150ml with the reserved pear juice.
Trifle recipes have definitely stood the test of time. Then top the trifle with any leftover fruit before piling high with whipped cream. Make up the jelly and pour over the fruit and cake.
Cream sherry is commonplace in a trifle but i like to use liqueurs like grand marnier frangelico or amaretto to add a little sweetness. Bring up to 600ml 1pt with the reserved juice sherry if used and water. Refrigerate 20 minutes or until jelly is almost set.
Chill for 3 4 hours. Slice sponge into fingers strips and arrange in the base of a large glass bowl. Some for the trifle some for the cook 4.
Dissolve jelly in 300ml pt of boiling water stirring well. Place in the base of three and a half pint 2 litre glass trifle bowl. Cover the fingers with a thick layer of raspberries or strawberries.
More cake more berries more jelly and more custard. Top again with fruit sherry jelly and custard. Sprinkle the sherry over the sponges and spoon over the partially thawed raspberries and their juice.
