Carefully stir in baking soda and remaining ingredients. Add the 2 cups of honey roasted peanuts and continue cooking stirring to 300 f. Don t stir the mixture.
Combine water and honey in a small saucepan. Spread with a heat resistant silicone spatula or use forks to pull the mixture to spread in the pan. You want the mixture to continue boiling but not spill out of your pan.
You can also use the cold water test to ensure you ve reached soft crack stage. Mixture will fluff up spread mixture onto a well buttered baking sheet and cool completely about 1 hour. Stir in the baking soda.
Bring to a boil then reduce heat to medium low. Coat a 12 by 17 inch rimmed baking sheet with cooking spray. Reduce heat to medium high.
Boil until you mixture reads 245 f on a candy thermometer. Immediately pour the mixture into the prepared pans. Add sugar and continue to stir until sugar is completely dissolved and syrup is quite thick.
