Recipe Pecan Pie Cheesecake
First preheat the oven to 325 f.
Recipe pecan pie cheesecake. Preheat the oven to 375 degrees f 190 degrees c. Turn off the oven and leave cheesecake in with oven door closed for 1 hour. Cool to room temperature run a knife around the edges of the cheesecake then refrigerate until thoroughly chilled at least 4 hours but preferably overnight.
Then combine graham cracker crumbs butter and brown sugar in a medium size bowl. Melt butter in a small saucepan over medium heat. Preheat oven to 325ยบ and grease an 8 or 9 springform pan with cooking spray.
Cook on low heat until the mixture thickens like a pudding 5 10 minutes. Gently place pecans on top. Let cool to room temperature then spoon over.
In a bowl combine the brown sugar cornstarch and salt stir together and pour into a medium saucepan on low heat. Pour the cheesecake filling over the pecan pie layer and bake until the edges are set and the middle still jiggles slightly 45 to 60 minutes. Remove from heat and stir in 1 1 2 cups toasted pecans 1 3 cup heavy cream and pinch of salt.
Line the bottom of 9 inch springform pan with parchment paper and set aside. Spread over the bottom of the pie crust. Place springform pan on a cookie sheet put it in the oven and reduce the heat to 325 f bake the cake for 60 70 minutes until toothpick inserted in the center comes out almost clean.
Bake for 10 minutes. Add brown sugar and cook until bubbling about 3 5 minutes. Stir in heavy cream and vanilla then pour cheesecake mixture over pecan filling.
