If you would like your rice pudding to be white reduce the amount of both cinnamon and nutmeg to a pinch and add them at the very end of the cooking process along with the lemon zest. It is most often found with sugar added in the form of sweetened condensed milk to the extent that the terms condensed milk and sweetened condensed milk are often used interchangeably today.
