Recipe Spaghetti Squash Pad Thai
Place spaghetti squash cut side up on a baking sheet.
Recipe spaghetti squash pad thai. Preheat oven to 450 degrees f 230 degrees c. Microwave uncovered on high until tender about 10 minutes. Drizzle 2 tablespoons of the pad thai sauce around the outside edge of the pan then stir it into the squash.
Add the scallions and bean sprouts to the pan with the squash and stir to combine. Add 2 tablespoons water. In a large bowl combine the spaghetti with the cucumber carrots bell pepper green onion onions peanuts cilantro and the sauce.
Give it a quick taste and add up to 2 tablespoons additional sauce if needed. Place squash cut side down in a microwave safe dish. Add mixture back to the hollowed out spaghetti squash halves.
Remove the squash from the oven and with a fork pull at the edges to produce that stringy spaghetti quality. Bake in a 400 degrees f oven until tender 40 to 50 minutes.
