Recipe Sweet Potato Lentil Soup
Bring to the boil cover with a lid then reduce the heat and simmer for 30 minutes until the vegetables are tender.
Recipe sweet potato lentil soup. Blend until smooth using a stick blender. Puree the soup adding in the coriander and the juice of the lemon. Bring a large pot to medium heat and add a splash of neutral cooking oil or vegetable broth.
Stir in vegetable broth tomatoes sweet potatoes and lentils. Simmer until the potatoes and lentils are cooked about 20 30 minutes. Add the sweet potatoes and lentils and 1 litre of the stock.
Add the zucchini and saute until softened about 2 to 3 minutes more. Tip in the onions apple garlic coriander stalks and ginger season then gently cook for 5 mins stirring every so often. Stir in the lentils vegetable broth and water.
Preheat the oven to 180ºc 350ºf gas 4. Add the diced tomatoes bay leaves thyme and rosemary. Cover and bring to the boil.
Add garlic and ginger and saute 1 minute. Stir in the carrots sweet potatoes and red potato if using. Combine with the stock or water lentils garlic cumin cayenne and turmeric in a pot.
Tip into the pan with the stock lentils milk and seasoning then simmer covered for 20 mins. Add the rosemary thyme and black pepper to taste then sauté for an additional 1 to 2 minutes next add the lentils sweet potatoes and vegetable broth to the pot. Heat 2 tbsp olive oil in a pot over medium high heat.
