Beat together sour cream and cream cheese until well blended.

Remove potatoes from oven and wait until cool enough to handle. Place potatoes directly on rack and bake until soft and easily pierced with the tip of a knife 1 hour to 1 hour 15 minutes depending on size. These twice baked potatoes could certainly stand on their own as a main course.
Bake uncovered at 350 f for 20 minutes or until heated through. Cut baked potatoes into chunks approximately 1 inch cubes and put into a greased 9 x 13 inch baking dish. For a heartier dinner top the twice baked potato with some hot bean or meat chili.
This twice baked potato casserole is about as good as it gets. Reduce heat to medium low and simmer until tender about 15 minutes. Peel and mash potatoes in large bowl with potato masher or back of fork.
Stir in remaining ingredients until well mixed. It is the ultimate side dish made with mashed potatoes that are loaded with cheese sour cream cream cheese and garlic and then topped with more cheese and bacon. Place in a 9 x 13.
