Heat olive oil in sauté pan.

Stir to combine adding enough pasta water to create a thin sauce. Season with salt and pepper and cook until browned about 8 minutes. Add ricotta and 2 tablespoons grated parmesan.
Add sherry and garlic. Halfway through cooking add crushed garlic salt and pepper. Add mushroom mixture ricotta and lemon juice to pasta.
Cool slightly and serve. Remove from heat and allow to cool slightly in a small mixing bowl. Add chopped stems and the one extra mushroom.
Melt butter in a skillet over medium heat. Preheat oven to 350 f. Stir ricotta cheese into mushroom mixture and remove from heat.
Remove skillet from heat and stir in 1 tablespoon butter. Sprinkle extra parmesan over the top. Cook mushroom in brown butter.
