Grilled and skinned red pepper wilted spinach and salty tangy feta cheese alongside slowly caramelised onion make this a vegetarian taste explosion.
Remove skillet from heat and season spinach mixture with salt and pepper. A handful at a time add the spinach letting it cook down a bit before adding more. Increase the heat to high and add the spinach moving it around a lot so it doesn t overcook when some leaves begin wilting remove from heat.
Bake for 20 25 mins until set and golden brown. Add the parsley garlic and marjoram and cook for a minute or two. Crumble the feta on top pressing some of it down into the mixture.
In a bowl whisk together the whipping cream eggs salt and pepper. Bake for 30 to 35 minutes until the quiche is set and the top is a light golden brown. When the case is ready sprinkle the crumbled feta over the base then the sautéed spinach.
Using a pastry brush lightly brush bottom of the crust with some of the beaten egg and place in oven for 5 minutes. Remove skillet from heat and season spinach mixture with salt and pepper. Gradually add the creme fraiche then stir in the dried oregano and season.
Peppers and tomato and finally pour over the egg mix. Add salt i use 1 2 teaspoon. Pour cream mixture over spinach and bake quiche on a baking sheet in middle of oven 15 minutes.
