Recipe for old fashioned tapioca pudding. Longer soaking means less cooking which is a good thing. Cook and stir 5 minutes longer. If you can let the pearls soak overnight in a cool place like your fridge.
Otherwise the recipe is the same. Soak small pearl tapioca in milk for at least one hour or overnight in a cool place. Combine sugar and eggs stirring well with a whisk.
Reduce heat to low. Bring the mixture to a boil over medium heat stirring constantly. Combine 3 4 cup water and tapioca in a medium saucepan.
Bring to a simmer being careful not to let the tapioca stick to the bottom of the pan. Put the yolks into a bowl and stir in some of the tapioca mixture to temper the eggs. Stir together the milk tapioca sugar and salt in a medium saucepan.
Reduce heat and simmer 30 minutes or until mixture thickens stirring frequently. Add the sugar and salt.
