I still remember sometimes when we had finished our fruitcake before christmas my mother used to bake another light fruitcake and i used to make faces for my beloved fruitcake. For me it is old fashioned rich moist christmas fruitcake. Combine chopped dates nuts candied fruit honey and fruit juice. Wrap cake in wrap with foil.
In bowl combine peels raisins currants pecans and cherries. This blends and mellows the cake. Fill pan 2 3 full with batter.
Sift flour together with salt and baking soda. Brush with remaining 1 1 2 tablespoons brandy. Beat in eggs one at a time and add to fruit mixture.
Maintenance of your fruit cake. Bake at 275 for 3 hours. Bake cake an additional 30 minutes or until a wooden pick inserted in center comes out clean.
In a large saucepan melt the butter over medium heat and add the raisins dates prunes currents brown sugar molasses spices coffee liqueur or coffee and the orange zest and juice. One half hour before cake is done brush top with corn syrup. I love any kind of cake with any kind of filling but on christmas a rich fruitcake is a must thing for me.
