Recipe Sweet Potato Rounds
In a medium bowl combine the slices oil cinnamon and salt.

We topped these with spicy black beans crumbled cotija cheese and cilantro leaves. You can also try them with the cheese of your choice and chutney salsa or pesto. Lightly brush the potatoes with the oil mixture.
In a large mixing bowl combine together the olive oil sea salt paprika red pepper flakes and ground black pepper. 2 large sweet potatoes peeled and cut into inch rounds. Drizzle olive oil onto large sheet pan and spread until even on baking sheet.
Arrange the rounds on a baking sheet in a single layer. Arrange the potato slices not touching in rows on a baking sheet. Bake in the oven for 30 mins or until golden and crisp.
Trust me rounds are much easier. Put the sweet potato rounds on a baking tray and toss with the oil and some seasoning. Wash sweet potatoes and remove any growths or blemishes but do not peel.
