Recipe Sweet Potato Apple Soup
Roast 40 45 minutes or until very tender stirring occasionally.
Recipe sweet potato apple soup. Cube sweet potatoes and apples and place them in a slow cooker. Now add the sliced sweet potatoes chicken stock and water. Preheat oven to 450 f.
Place cubed sweet potato and cut apples on a baking sheet and roast in oven for 20 30 minutes until tender. Add chicken stock apple cider cinnamon brown sugar lemon juice and sage. A few minutes before taking sweet potatoes out of the oven.
Add the onion garlic and ginger and cook over low heat. Add the onion celery bay leaf and carrot. Transfer to a large saucepan.
In a medium soup pot heat the oil until simmering. Bring to simmer and cook covered until the potatoes are tender 12 to 15 minutes. Stir and cook the apples and vegetables until the onions are translucent about 10 minutes.
If you re watching your waistline you can use less cream omit it all together or even substitute a bit of cream cheese or goat s cheese. Add chicken broth and bring to a boil. Stir and cook until fragrant about 5 minutes.
Heat olive oil in a soup pot over medium heat. Working in batches transfer the mixture to a blender and puree until smooth adding more water if necessary to reach the desired consistency. Remove the bay leaf and discard.
