Recipe Roast Pork Leg Crackling
Traditional very tender roast leg pork and lovely crackling.

Rub the salt and oil into the rind and place the pork leg roast into a large shallow baking dish. Turn the heat down to 190c fan 170c gas 5 and calculate the total cooking time allowing 35 minutes to the pound then. Roast for 30 to 45 minutes until the skin of the pork has started to puff and you can see it turning into.

Reduce the heat to gas 4 180 c fan 160 c. Slow cook the leg for 3 5 hours or until the meat is easily pulled apart. Roast for a further 2 hrs.
