Sear chicken thighs in a hot pan until well browned on both sides. Salt and pepper the chicken. Top it with the apricots.
In a saucepan mix the apricot jam and soy sauce. Add the rest of the sauce to the chicken and cook until internal temperature reads 185. Simmer for 5 minutes.
Pour the mixture over the chicken. Heat oil with butter in a skillet over medium high heat. Make sure you use chicken thighs.
Season the chicken with black pepper do not use any salt.
