Recipe Spaghetti Squash Black Beans
Microwave 10 minutes or just until squash is softened turning after 5 minutes.
Recipe spaghetti squash black beans. In a large skillet heat oil over medium heat. Pierce spaghetti squash several times with fork or sharp knife to allow steam to escape. Season with salt and pepper.
Arrange squash in a large baking dish cut sides down. For the filling heat oil in a large skillet over medium heat. Cook stirring frequently 3 min.
Using a spoon scoop out the strands of spaghetti squash and add to the bean mixture. Add black beans salsa onions cilantro pumpkin seeds lime juice garlic salt cumin and salt. When squash is cool enough to handle use a fork to separate strands.
Divide mixture back into the 2 spaghetti squash shells. Slice squash in half and scoop out seeds. Let stand 5 minutes or until cool enough to touch.
Heat oven to 400ºf. Rake with a fork to remove flesh in strands leaving the shell intact for stuffing. Heat oil in medium skillet over medium high heat.
Bake at 350 degrees for 30 minutes until squash is soft when pierced by a fork. Or until heated through stirring frequently. Rub each half with olive oil.
