Old Fashioned Potato Soup Recipe
Melt 2 tablespoons butter with 2 tablespoons olive oil over medium heat in a large dutch oven or soup pot until the butter is foamy.

In a large saucepan brown the onion in the butter. Cook and stir until the onion has softened and turned translucent about 5 minutes. Cook on low until potatoes are creamy about 45 minutes.
Add remaining ingredients and stir to combine. Add diced onions and cook for about 5 minutes until tender and translucent. Stir in the milk and parsley and continue cooking until mixture is heated through.
See cook s note in another pot and bring to a boil. Season with salt and pepper. When the potatoes are soft add the milk and butter.
Stir in the onion. Allow the milk to bubble slightly around the edges of the soup pot about 5 to 10 minutes. Cook over medium heat until the potatoes are fork tender about 20 minutes.
