In a large mixing bowl stir together undrained diced tomatoes tomato paste brown sugar italian seasoning basil thyme oregano and salt and pepper to taste. Place bread cubes in casserole and drizzle with butter. Simmer over low heat for 5 minutes then set aside.
In a saucepan over medium heat stir together the water and tomato puree. In a large bowl combine tomatoes sugar tomato paste mustard and salt. Refrigerate up to 4 hours if desired.
Season with salt and freshly ground black pepper to taste. Place bread cubes in the baking dish. Pour the sugar on top of the tomatoes followed by the bread.
