Recipe Quinoa Butternut Squash Cranberries
In a large bowl combine the warm quinoa with roasted butternut squash cranberries red onions and pumpkin seeds.
Recipe quinoa butternut squash cranberries. In a large bowl combine quinoa roasted butternut squash dried cranberries and toasted pepitas. Add butternut squash to a large bowl with olive oil salt and pepper. Quinoa with butternut squash spinach and cranberries to roast the butternut squash.
Step 1 position an oven rack in the center of the oven and preheat to 400 f. Remove from the heat and fluff with a fork. Remove from pan and let cool.
Line a rimmed baking sheet with foil and set aside. Before serving taste for salt and pepper. While the butternut squash roasts cook the quinoa.
In a medium pot bring quinoa and water to a boil reduce the heat and simmer covered until all the water has been absorbed. White quinoa is cooking add a few drizzles of olive oil to a saute pan and place over medium heat. Bring to a boil then reduce heat and simmer covered 15 minutes.
Add diced butternut squash and saute until tender about 10 12 minutes. Bake for 15 20 minutes tossing halfway through until fork tender. While those are cooling make the vinaigrette by adding the oil vinaigrette garlic honey and mustard to a mixing cup.
Pour vinaigrette over the salad and gently toss until combined. Line a baking sheet with parchment paper. Remove the butternut squash from the oven once done and set aside to cool.
