Recipe Sweet Potato Rolls
Using a potato masher or fork mash potatoes with milk until very smooth.
Recipe sweet potato rolls. Add remaining sugar sweet potato butter or margarine salt and slightly beaten eggs. Combine sweet potatoes and lemon juice in the bowl of an electric mixer fitted with the paddle attachment. 2 ingredient sweet potato rolls.
Add flour mixture 1 cup at a time to the mixer bowl. In a separate bowl whisk together the bread flour and baking powder. Bring sweet potato and milk to a boil in a small saucepan over medium high.
Reduce heat to medium low. Place rolls in a lightly greased large round pan a 14 deep dish pizza pan works well or two lightly greased 9 or 10 cake pans. Beat until smooth 2 to 3 minutes.
Place the dough on a floured surface and knead 4 to 5 times. Divide into 30 portions. Add the sweet potato puree butter salt and beaten eggs.
Cook covered stirring occasionally until potatoes are very soft about 20 minutes. These rolls are soft tender and super easy to make. Using the paddle attachment mix until well incorporated.
Set aside to rise for about 3 hours or until rolls fill the pan. Turn out on a lightly floured surface. Add 1 to 2 tablespoons of water or flour if needed.
