You can top the potato off with some cheese. To the potato flesh add sour cream milk butter salt pepper 1 2 cup cheese and 1 2 the green onions. Let potatoes cool slightly.
Spoon the mixture into the potato skins. Next slice potatoes in half and scoop out the insides in a bowl mash together the scooped potato cream cheese shredded cooper cheese butter. Mix the mashed potatoes with the rest of the ingredients.
