Peanut Brittle Recipe Almonds
Microwave at high 3 minutes sugar mixture will be clear and bubbly.
Peanut brittle recipe almonds. Break brittle into pieces. Add almonds sugar and syrup. Peanut brittle is the more traditional choice of nuts but this recipe uses almonds instead.
Immediately pour peanut mixture onto buttered baking sheet. Let cool completely about 15 minutes. Quickly spread mixture to 1 2 inch thick using an oiled metal spatula.
Microwave on high for 45 seconds it will get slightly more runny. Bring to a boil stirring constantly to dissolve sugar. Spread the mixture onto the prepared baking sheet in a thin layer.
Microwave at high 3 minutes or until mixture is a light caramel color stirring every minute. Cool until the mixture hardens and break into pieces to serve. Using a pastry brush dipped in water wash down the sides of the pan to eliminate sugar crystals.
Melt butter in a skillet over medium high heat. Remove pan from heat. Cook and stir the almonds until the mixture turns caramel in color about 6 minutes.
In a large microwave safe bowl combine honey and coconut sugar. Stir in butter vanilla and salt. Brittle can be stored in an airtight container up to 2 weeks.
