Quesadilla Recipe Black Bean Corn

Stir in spinach just until wilted. In a small bowl mash 1 cup of the beans with a fork. Place the two tortillas down on a plate or cutting board.
Repeat the process with the other tortilla and use up remaining cheese and corn black bean filling. Stir in corn cumin chili powder mashed beans and the remaining beans. Sprinkle the cheese over the mixture.
