Recipe Rice Pudding On The Hob
To prevent the rice from sticking to the bottom of the pan stir the mixture frequently with a rubber spatula or wooden spoon.

After 30 minutes the rice should be soft and the mixture creamy so it s done. Remove from heat and add the vanilla extract. Remove the pudding from the heat and allow it to cool for 5 10 minutes.
Place a lid on the pan and continue to cook on the lowest setting for 30 minutes. By the end of this time the rice should be plumped up and tender and the liquid well reduced. Bring to the boil on the hob.
Bring to the boil then immediately turn the heat down to something between a boil and a simmer. The rice will absorb the rest of the liquid and become thicker and creamier. When the rice is tender remove from heat and add the sugar and ground cinnamon.
Stir every 5 minutes or so. You want the rice to be cooked but still al dente. Add the rice milk and sugar to a saucepan.
Cook the rice stirring very regularly for 20 25 minutes. Add the pudding rice milk and cream to a medium non stick saucepan and stir well.
