Twice baked potatoes recipe with paprika. To make ahead place in a container cover tightly with foil place in plastic bag and freeze. Prick the potatoes all over with a fork. Spoon the mixture into the potato skins.
Sprinkle with paprika for garnish. Place small piece of potato skin inside the bottom of each larger potato shell. Sprinkle each one with paprika and top with a pat of butter from the remaining 1 2 stick.
Set skins in a large baking dish. Fill each potato skin with the filling. Brush tops with melted butter and sprinkle with paprika.
Smash the potatoes into the butter bacon and sour cream. Gently press the surface of the filling with a fork to create texture. Add sour cream butter cream cheese onions salt pepper thyme and milk to the potatoes and mash until light and smooth adding more milk if needed.
Fill each potato with an equal amount of cheese mixture. Garnish with chives if desired. Brush lightly with the oil.
Lay the hollowed out potato shells on a baking sheet. Preheat oven to 450 degrees f. Spoon potato mixture evenly into shells.
