Quiche Recipe Zucchini Tomato

It s simple enough as quiches go shallots shredded zucchini an assortment of colorful cherry tomatoes basil and herbs with a custard base of eggs milk cream sour cream and parmesan. Add the zucchini bacon green onion corn cheese cilantro salt and pepper and mix well. Cover and cook until the onions and zucchini are softened 5 to 7 minutes.
Add salt and pepper oregano and then top with shredded cheese. Every bite is a taste of summer. Tomatoes basil and zucchini play well together as a matter of principle and they work beautifully in this quiche.
Butter a pie plate put zucchini mixture in plate and then arrange sliced tomato on top of zucchini. Heat oven to 375 f. Bake for 30 minutes until the center is set and a toothpick comes out clean.
Sprinkle zucchini mixture with cheese flour and tomato. Bake at 350 f for 45 minutes or until set. Sprinkle the tomatoes on top of the egg mixture.
I use the coarse grate on my food processor in a colander sprinkle grated zucchini with 1 tsp. Add the onion zucchini 1 2 teaspoon of the salt and 1 4 teaspoon of the pepper. Pour the egg mixture into the precooked crust.
Arrange the sliced zucchini and tomatoes on top in layered concentric circles with the wider zucchini and tomato slices around the outer edge. In a large skillet over medium heat heat the oil. Mix well and set aside for a half hour while you prepare everything else.
