Recipe For Tomato Gin Soup
Remove from the heat add the gin and process with a hand blender to a smooth purée.

Add butter to pan with bacon drippings melt butter add mushrooms and sauté until golden. Add the onion and garlic and sauté for a 1 2 minutes until golden. Saute mushrooms in oil until almost soft.
Place the halved tomatoes into a large bowl drizzle with olive oil and toss with salt pepper plus the thyme oregano. Place the tomatoes on a baking sheet pop in the oven for 20 30 mins until the tomatoes soften. Add in the warm vegetable stock and bring to simmer for about 10 15 minutes until cooked through.
In a large saucepan over medium heat saute the mushrooms in the butter for 3 or 4 minutes. Add garlic and cook over low heat for 5 minutes. Increase heat to medium and add tomatoes along with any juice to pan.
