Recipe Old Fashioned Potato Soup

Recipe old fashioned potato soup. Peel and dice potatoes set aside in a bowl of cold water. Cook over low heat stirring constantly until warmed through. Add the chicken broth and diced potatoes to the pot.
Cook on low until potatoes are creamy about 45 minutes. In a large deep skillet fry the chopped bacon until brown and reserve 2 tbsp of the grease to make a roux. Wash peel and chop the potatoes carrots and celery.
In a large pot cook 1st four ingredients until potatoes are soft. Stir in the milk and parsley and continue cooking until mixture is heated through. 2 minutes thicken potato mixture with flour mixture.
Add the potatoes carrot water salt pepper and dillweed. Combine flour and butter and cook over medium low heat until a smooth paste is formed approx. Add the flour to the cooked onions to make a paste.
Allow the milk to bubble slightly around the edges of the soup pot about 5 to 10 minutes. Cook stirring constantly for 2 minutes. Combine the potatoes onions water and salt in a saucepan over medium heat.
Peel and chop 4 potatoes into bite sized chunks and place into a medium sized stockpot. Drain and spoon the vegetables out of the skillet and set aside. Remove from the heat and drain away the water from the potatoes.
