Recipe Potato Bean Soup
Continue to cook for 10 12 minutes.
Recipe potato bean soup. Reduce heat and simmer for 2 hours. Cover with water and bring to a boil over medium high heat. Taste and adjust seasoning if necessary.

Add the tomatoes and sugar and cook over medium heat until mixture is bubbling and tomatoes have thickened slightly 5 minutes. Cover and simmer for 25 minutes or until potatoes are tender. Stir the beans into the potato mixture.
Add the remaining ingredients and cook for 10 additional minutes. Preparing beans from scratch is one of the least expensive ways to stay full and healthy. Saute the garlic onion and celery in 4 tablespoons of vegetable stock for 3 5 minutes over medium heat.
Place the lid back on the pot and cook for 15 minutes. Mash with a fork. Simmer for 10 15 minutes or until the potatoes are tender.
Add the tomatoes mushrooms and 4 cups of vegetable stock. Add the potatoes and stir into the soup. With the back of a spoon lightly mash about half of the potatoes in the broth.
