Microwave on high 5 minutes or until tender. Lay the sweet potatoes on baking sheet and bake 15 20 minutes flipping once. Peel and cut the sweet potatoes into 1 inch thick rounds.
Remove sweet potatoes from the oven hollow out the middles. Take each sweet potato round and coat it in the olive oil mixture. Preheat your oven to 500 f.
In a small bowl combine the plain olive oil sea salt and paprika. Drain and dry the sweet potatoes and toss olive oil sea salt and cinnamon. In a large bowl mix butter and seasonings.
Add sweet potatoes and toss to coat. Place in small microwaveable bowl. Preheat oven 400f slice and bake your sweet potato for 30 minutes.
Wrap 1 piece bacon around each sweet potato cube. Preheat the oven to 450 f. Sprinkle with brown sugar.
