Recipe Sweet Potato Kidney Beans
Cook over a medium heat for a few minutes until soft.
Recipe sweet potato kidney beans. Add the rinsed kidney beans to the bowl. Step 2 meanwhile mash the avocado with the lime juice in a small bowl then stir in the chilli tomatoes coriander and onion. Reduce heat to low then allow them to cook down and deepen in color about 10 minutes more.
In a large pot heat the oil over medium heat. If you prefer to peel the sweet potatoes do this and then cut into pieces about 2 cm big. 1 pinch each of sea salt flakes and freshly ground black pepper.
Add the roasted sweet potato pieces to the pan and mix well. Add the tinned tomatoes kidney beans and spices and bring to a simmer. Leave this for a further 5 minutes.
1 amount of vegetable oil for frying. 1 tbsp dried mint. Cook for at least 10 minutes until the tomatoes have thickened and the mixture looks nice and rich.
Heat oven to 220c 200c fan gas 7 oil the sweet potatoes then put them straight on the oven shelf and roast for 45 mins or until tender all the way through when pierced with a knife. 1 x 400g 14oz can of red kidney beans drained. 500 g sweet potato peeled and cut into 1cm 0 5in chunks.
150 g greek yogurt. Add them to the prep bowl with the sweet potatoes. 30 g flat leaf parsley roughly chopped.
