Recipe Sweet Potato Latkes
Fill a bowl with lightly salted water.
Recipe sweet potato latkes. Pat the grated sweet potato dry with a cloth or paper towels then place into a bowl. Place the grated sweet potatoes into a large bowl and add the flour the white parts of the green onions the eggs garlic paprika salt and pepper and mix together well. Form mixture into pancake size cakes and fry in hot oil.
Stir the eggs and pepper into the mixture until well combined. Working in batches of 4 spoon 1 8 cup potato mixture per latke into oil and flatten to 3 inch. Heat oil in a deep 12 inch nonstick skillet over moderately high heat until hot but not smoking.
Mix well to combine. Pour oil to depth of 1 2 inch into a large heavy skillet. In a 12 inch skillet heat 1 4 cup vegetable oil over medium high heat.
Flip cakes after 2 to 3 minutes when bottom is browned and brown other side. Bake 12 15 minutes turning once until golden brown. Add in scallions flour baking powder beaten eggs cayenne pepper salt and black pepper.
Carefully drop forkfuls of the potato shreds into the oil and gently flatten them with a spatula. Cook until crispy and golden about 2 3 minutes per side. Grate the sweet potato and onion and place in a medium bowl.
Repeat process with remaining grated potato and onion. Drop sweet potato mixture by teaspoonfuls into skillet. Using a food processor with a grater blade and process the russet potatoes sweet potatoes and red onion.
