This easy and delicious simple rice pudding is made with all organic ingredients loaded with coconut milk vanilla and nutmeg for such a comforting treat. The key to this rice pudding is a very high ratio of milk a full 6 cups to rice just 1 2 cup. It is best made with whole milk for a creamy flavour but it is good with semi skimmed and even skimmed milk especially if you add a bit of evaporated milk before eating it.
Milk sugar salt long grain rice and vanilla extract. Add the rice and bring to a simmer then cover lower the heat to medium low and simmer for 15 minutes. In a medium sized saucepan bring the milk butter salt and orange zest if using to a simmer over medium heat.
While the rice cooks in the milk its starch is released which naturally makes the pudding creamier. Condensed milk is cow s milk from which water has been removed. The pudding comes together on the stove in about 30 minutes.
Bring to a boil over medium heat stirring constantly. Whisk together the egg sugar vanilla and cinnamon in a small bowl. You may think when you start that there s no way it will thicken up enough but it magically does.
