Good red beans and rice recipe. Heat oil in a large heavy based pot over medium high heat. Pour in beans and tomatoes with juice. Cook 10 to 12 minutes or until vegetables are tender stirring occasionally.
Most of the time red beans and rice will be served with sausage either cooked into it or on the side. When ready to cook drain the soaked beans give them a rinse and set aside. Bring to a boil then simmer covered for 3 4 hours or until beans are tender.
In a large skillet over low heat cook sausage for 5 minutes. For this amount of beans i like to use about 3 cups of dry rice. Rinse beans and transfer to a large pot with 6 cups water.
Season with oregano salt and pepper. The typical sausage used is andouille but smoked sausage or polish sausage works just as good. Season with bay leaves cayenne pepper thyme sage parsley and cajun seasoning.
Sort dry red beans to make sure all discolored beans and debris are removed. Stir in beans and reserved bean cooking water bacon and cayenne pepper sauce. Simmer uncovered for 20 minutes.
Fry sausage until slightly browned while stirring occasionally about 5 minutes. Sort and rinse beans. Just before serving remove bay leaves and stir in parsley.
