Quesadilla Recipe With Refried Beans
In a small pot warm the refried beans over medium low heat.
Quesadilla recipe with refried beans. Fold each tortilla in half to cover filling. Heat a pot with a drizzle of olive oil over a medium heat once hot add the garlic and cook for 1 min add the smoked paprika and ground cumin and cook for 30 sec more add the kidney beans with 100ml 150ml cold water and bring to the boil. Step 2 coat a large nonstick skillet with cooking spray and place over medium high heat until hot.
Top with remaining tortillas. Add 1 quesadilla and cook 3 minutes on each side or until golden. Spread half of the tortillas with bean mixture.
Cook on both sides allowing the cheese to melt and the beans to heat up. Top each with 1 4 cup chicken and 1 4 cup cheese. Stir together refried beans and drained tomatoes in medium bowl.
Add the cumin and cook for 1 min more. Spread each with 1 4 of the refried beans and sprinkle evenly with 1 4 of the cheese leaving about a 1 4 inch border around the edge to account for melting. Spread 1 3 cup bean mixture over half of each tortilla.
In a 12 inch skillet nonstick or cast iron warm the olive oil over medium heat. Add garlic and cook stirring for 30 seconds. Heat a griddle over medium heat.
Tip in the beans paprika and a splash of water. Using a potato masher break the beans down as they warm through to make a rough purée. Add the spinach and garlic and cook stirring often until just wilted about 3 minutes.
