Recipe Pork Loin End Roast
Season the meat all over with the ground fennel.

Fresh are best but. 3 lbs will bake closer to the lesser time the 4 lb closer to the greater time. Remove roast to a platter.
I actually take mine out at 135 f 140 f but that isn t recommended to be safe. This will make it easier for the spice mix to stick. Rub on the thyme garlic mixture.
Dry the pork loin with paper towels and rub it all over with the seasoning paste. Take the spice mix and rub it all over the pork loin. Roast either with vegetables or without.
Make 6 horizontal cuts down center of roast 3x3. Place pork loin into oven turning and basting with pan liquids. Rub the roast all over with mustard.
In a small mixing bowl combine paprika garlic powder onion powder thyme rosemary salt and pepper. This method quickly cooks the meat while keeping it juicy. Sure this pork loin roast takes a while to cook but it s definitely worth it.
