Recipe Potato Mushroom Soup
Pour in the dried mushrooms and stock cover the pan and leave to simmer for 20 mins.
Recipe potato mushroom soup. Add in the mushrooms and saute until tender about 5 minutes. Add in the beef broth and heat to a boil. Bring to a boil.
In a small bowl combine flour and cream until smooth. Stir in the parsley and plenty of pepper. In a large pot melt the butter or heat the oil over medium high heat.
Cook stirring frequently until the mushrooms release their liquid and start to brown about five minutes. Add in the potatoes reduce to a simmer and cover for 15 minutes until potatoes are tender stirring occasionally. Discard bay leaf from soup.
Stir in mushroom mixture. Slowly stir in the flour until there are no clumps. Add the fresh mushrooms and garlic to the pan with the potatoes thyme and carrots and continue to fry until the mushrooms soften and start to brown.
Gradually stir into soup. Meanwhile chop the onion and the garlic.
