Recipe Potato Sausage Soup
Potato sausage soup is an old fashioned sausage soup recipe.
Recipe potato sausage soup. Bring to a boil. Add the stock and milk then bring to a low simmer. Add flour and stir until mixed.
Add chicken broth to sausage and onions and bring to boil. Stir in the garlic herbs and spices. Add the potatoes and cook partially covered until tender.
In a 4 quart saucepan over medium heat saute the onions and the pancetta for 10 minutes or until onions are almost clear. Add potatoes and simmer on med high for 20 mins or until potatoes are soft. Add celery onions and carrots cook and stir for 2 minutes.
Do not allow to become mushy make a roux with 1 tablespoon of oil and 1 tablespoon of oil when the roux is bubbling remove from heat and add 1 teaspoon of paprika stir to combine. This simple potato soup recipe uses breakfast sausage diced potatoes celery and onion which is thickened up with a simple roux. Add thyme basil and salt.
Stir in tomatoes with juices and cornstarch and simmer 10 minutes more. In the same pan combine the potatoes corn broth celery carrot and seasonings. Cover and simmer 25 minutes or until potatoes are tender.
Reduce heat and let simmer until potatoes are tender about 1 1 2 hours. Remove from heat and mash potatoes completely. Add water to cover the mixture by 1 2 inches and bring soup to a boil reduce heat to a strong simmer and cook for 15 minutes or until the potatoes are soft.
