Recipe Roasted Herb Potatoes
Preheat oven to 425.
Recipe roasted herb potatoes. Heat oven to 200c 180c fan gas 6. Put 2 3 tbsp duck fat or olive oil in a roasting tin and put in oven for 10 mins to melt. Preheat oven to 425 f.
Strip leaves from rosemary oregano and sage and stir into tin with seasoning. Preheat oven to 425 f 220 c. Toss to coat well.
Pour into a baking dish. Season with salt pepper and a pinch of crushed chilli flakes flakes. Gently drain the potatoes in a colander but don t shake or ruffle up.
In a large bowl toss potatoes oil garlic and herbs. Season with salt pepper and a pinch of red pepper flakes. Rinse and dry the unpeeled new potatoes.
Bring the water to the boil and simmer gently for 8 10 mins until the potatoes are cooked through but not about to collapse. Mix oregano paprika thyme sea salt and garlic powder in small bowl. Using a thin flexible metal spatula flip potatoes.
Leave to drain and cool. Pour into a 9 x 13 baking dish. Spread potatoes in single layer on foil lined 15x10x1 inch baking pan.
