Season chicken and brown the skin.
Recipe using chicken thighs and mushrooms. Season chicken thighs on both sides with thyme oregano salt and pepper. Flip thighs over and brown other side an additional 8 minutes. Add the garlic parsley thyme and rosemary.
Season with salt and pepper to taste. Heat the oil in a large nonstick frying pan over a medium heat. Taste test and season with salt and pepper to your taste.
Add garlic shallot and mushrooms and cook stirring occasionally until mushrooms are tender and browned about 4 minutes. Whisk in remaining 1 1 2 tablespoons flour until lightly browned about 1 minute. Heat the butter in the pan then add the onion and cook for 5 8 mins until soft.
Add the chicken thighs and fry for 12 mins turning halfway until golden and crisp on both sides. Sauté until fragrant about 1 minute. Set chicken on top of mushrooms and bake until chicken is fully cooked.
Season with salt and pepper and cook until soft about 3 minutes. Gradually whisk in chicken stock and thyme. Place thighs skin side down into the hot skillet and cook until browned about 8 minutes.
