Cover and simmer for 2 1 2 to 3 hours or until meat is tender.

Beat on low for 3 minutes. Drain off the grease and return to the stove. Remove roast and shred meat.
Strain and reserve cooking liquid. Drizzle over warmed beef buns. Combine 1 4 cup softened reduced fat cream cheese and 1 tablespoon milk in small bowl stirring until smooth.
Place the onions in the bottom of a slow cooker and set the beef on top. Cook stirring to break up lumps until no longer pink. Knead until smooth and elastic about 6 8 minutes.
